CIMOL RECIPE (CIRENG MONTONG)

Cimol (Cireng Montong) is a popular snack in Indonesia, especially in West Java. Cimol is made from a mixture of tapioca flour and spices which are processed into small balls and fried until crispy. The following is the basic recipe for making cimol:

**Ingredients:**

- 250 grams of tapioca flour

- 50 grams of wheat flour

- 1 teaspoon salt

- 1/2 teaspoon granulated sugar

- 1/2 teaspoon stock powder (optional)

- 1/2 teaspoon ground pepper (optional)

- 2 cloves garlic, crushed or very finely chopped (optional)

- Enough water (around 200-250 ml)

- The oil for frying

**How to make cimol:**

1. Mix tapioca flour, wheat flour, salt, sugar, stock powder (if used), and ground pepper (if used) in a large bowl.

2. Add crushed or very finely chopped garlic to the flour mixture if you want to give the cimol additional flavor.

3. Pour the water little by little into the flour mixture while continuing to stir until the dough becomes soft and can be formed. Make sure the mixture is not too thick or too runny. If the mixture is too thick, add a little water; if it's too runny, add a little tapioca flour.

4. Once the mixture is ready, heat the oil in a frying pan over medium-high heat.

5. Take a small amount of dough (about a tablespoon) and roll it into small balls. You can also formulate the dough into other shapes, such as rings or ovals, according to your preference.

6. Fry the cimol in hot oil until golden yellow and fluffy. Make sure to flip the cimol so it cooks evenly.

7. Remove the cimol from the hot oil and drain on greaseproof paper or kitchen tissue to remove excess oil.

8. Cimol is ready to be served. You can enjoy it with chili sauce or your favorite sauce.

Good luck trying to make your own cimol at home! You can also adjust the spices and flavors according to your personal taste.
