EAST JAVA RAWON RECIPE
Rawon is a typical Indonesian dish originating from East Java. This dish is famous for its thick black broth and rich in spices. Rawon is usually served with chunks of tender beef and added bean sprouts, salted egg, chips, and chili sauce. Here is the basic recipe for making rawon:
Ingredients:
For the rawon sauce:
1. 500 grams of beef (cut according to taste)
2. 2 stalks of lemongrass, bruised
3. 4 bay leaves
4. 4 pieces of lime leaves
5. 2 pieces of turmeric leaves
6. 2 stalks of lemongrass, bruised
7. 2 liters of water
8. 2 tablespoons cooking oil
9. 2 tablespoons of salt
10. 1 teaspoon brown sugar
Ground spices:
1. 6 shallots
2. 4 cloves of garlic
3. 3 candlenuts, roasted
4. 3 cm galangal
5. 3 cm turmeric
6. 1 teaspoon coriander
7. 1/2 teaspoon cumin
8. 1/2 teaspoon pepper
9. 3 dried red chilies (according to taste, add more if you like spicy)
Complementary:
1. Bean sprouts, to taste
2. Salted eggs, to taste
3. Chips, to taste
4. Sambal, according to taste
5. Limo oranges, sliced as a complement (optional)
How to make rawon:
1. Heat cooking oil in a large pan. Saute ground spices until fragrant and change color.
2. Put the pieces of beef into the seasoning stir fry, stir until the meat changes color.
3. Pour water into the pan. Add lemongrass, bay leaves, lime leaves, turmeric leaves, and lemongrass. Let it boil.
4. After boiling, reduce the heat and let the rawon sauce simmer slowly until the meat is tender and the gravy is thick. This can take around 1.5 to 2 hours. If necessary, add water if the gravy is too thick.
5. After the meat is tender, add salt and brown sugar according to taste. Stir well.
6. When the gravy is ready, prepare accompaniments such as bean sprouts, salted eggs, chips, and chili sauce.
7. Serve rawon in a bowl. Place the accessories according to taste on top.
8. Serve rawon hot with white rice. You can also add lime wedges as a garnish.
